Arroz con gandules
Ingredients
A)
Dice ham 1lb
Pigeon beans 1 1/2 cans (Jibaro Brand)
B)
2 tablespoons minced garlic
2 tablespoons of olives
1 cup of sofrito (Recipe below)
1 Tablespoon of cumin
1 cube of beef season
C)
5 packs of Sazon
D)
8 cups of rice - Goya long grain
9 cups of water
1 tablespoon of salt
Direction
1. Heat a pan with olive oil 1/4 cup and Raise heat to full
2. Place ham in the pan
3. Stir - heat until a boil
3. Once it boils, add 5 packs of Sazon and Continue the boil
4. Pour the rice and Stir until it is spread evenly
5. Add 9 cups of water and 1 tablespoon of salt and Stir
7. Lower flame to medium-high, wait for 5-10 minutes
8. Keep lowering flame as it boils
9. When water has reached the rice level- stir to mix ( don't scrap the bottom)
10. Cover with aluminum foil, cover, and lower flame to low. Wait For 10 min.
Sofrito
2 bunch cilantro & culantro
2 Red/Green bell pepper
1 large white onion
6 small sweet pepper
4 garlic heads peeled and tips removed
1. Rinse all the veggies very well. Remove seeds from peppers and top parts and end tips of cilantro
2. Place as much in the blender oil 1st and blend away.
(I like to add 4 packets of sazón for color n flavor.)
3. Use a blender or processor.
4. You can freeze and use it whenever you want.
